- Observed noodles in walk in cooler, that were cooked yesterday to read at 48 degrees F. When asked what cooling process is used, employees stated improper procedures. Ensure to follow the following procedure to ensure food is cooled properly: After food is cooked and removed from stove, food has 2 hours maximum to be reduced in temperature to 70 degrees F. Food then has an additional maximum of 4 hours to reduced temperature to 41 degrees and below. It is recommended to divide foods into smaller portions, use ice baths, continuously monitor temperature and stir foods to ensure the above temperatures are reached in the time allotted.
- Observed raw beef and chicken in cold hold unit to read at 47 degrees F. Cold hold unit read around 47 degrees F. Employees explained that unit opened and closed frequently when preparing in morning. Unit was repaired recently with a new motor. Ensure that all food held under cold hold, is able to hold temperatures of 41 degrees F and below for foods.
- Observed personal items, beverages, and food, being stored on food service surfaces. Ensure that all personal items are stored in an area that is designated, and that personal items are separated and kept away from foods and food contact surfaces.
- Inspector observed dead roaches inside ice machine in kitchen. Owner stated this ice machine is not being used at this time, because sufficient ice is not being made. Calling in work order. Inspector asked owner to put a sign on this ice machine to determine that it is not to be used for any reason. Establishment has two other ice machines that can be used at this time.
- Observed unlabeled spray bottles storing table cleaner, in waitress area. Ensure that labels are placed on all toxic chemicals that are removed from original labeled conatiners.
- Observed drain pipe that was detached and letting waste water from three compartment sink, to leak onto floor. Issue was corrected on site. Ensure to provide an air gap between all drain pipe ends, and floor.
- Observed cold hold unit to have much debris along edges, along gaskets. Ensure to thoroughly clean and properly sanitize all surfaces to prevent contamination of food. Observed spices and containers where spices are stored, to be dirty along containers. Issue was corrected on the spot. Ensure to store spices in a manner that allows them to be thoroughly sealed to prevent pest infestation.

- -Observed personal drinks next to hand sink, in kitchen from area near stoves. Drinks were properly stored in a cup with lid and straw, but should be stored away from food and food preparation surfaces -Observed metal scrubbies in hand sinks throughout establishment. Ensure that hand sinks are kept free of items, and ONLY used for hand washing purposes. -Observed personal cell phone on top of preparation table. If tables or surfaces are being used for food preparation, they should not have personal items near them. Store in different location.
- -Observed broken watermelons (2) in back storage areas. Watermelons were discarded. -Observed several heavily dented cans in racks and storage area. Ensure that any food items stored in dented cans, are not used for service of customers.
- Several hand sinks throughout establishment, did not have paper towels available. Ensure that hand sinks are always available at all hand sinks.
- WD-40 can stored above containers of ingredients in back preparation area, on shelf. Ensure that all toxic items are stored away from and food and food preparation areas.
- -several cloth towels were observed to be lying around preparation tables. Ensure that cloth towels are stored in sanitizer immediately after each use. -Observed cloth towel underneath cutting boards. Ensure that cloth towels are only used for wiping surfaces, and when not in use, to be stored in sanitizer. -Observed meat being stored grocery store bag. Ensure that only food grade bags and containers are used for food storage. Food grade bags are appropriate. -Observed food debris along top of cold hold units. Ensure that refrigeration units are thoroughly cleaned and maintained to prevent cross contamination with foods.
