  • -Ensure to maintain all preparation surfaces, clean and to rotate deli tissue frequently to prevent cross contamination when sandwiches are prepared. -Observed much food debris accumulation, along gaskets of cold hold units/freezers. Issue was being corrected on site. Ensure to maintain all units, surfaces clean and sanitized to prevent contamination of food being stored on and in units. -Observed gaskets of cold hold unit to not be in good repair conditions. Ensure gaskets are replaced in order to allow units to properly close, and hold temperatures.
  • Permit posted in public view was out of date from October 2015. Last inspection report was kept in office. Ensure to post copy of active permit, along with this inspection report, in public view.

  • Foods in the cold hold unit (lettuce, cheese, tomatoes) were ~50 degrees F. All potentially hazardous foods must be kept at 41 degrees F or below.
  • Observed ice cream, lettuce and other food debris in all hand sinks. Hand sinks may only be used for handwashing. Items may not be disposed of inside hand sinks.
  • Two hand sinks did not have soap at time of inspection. Ensure that all hand sinks are supplied with soap and paper towels at all times.
  • Manager was not at establishment at time of inspection. Certified Food Manager should be present at establishment during all hours of operation. Ensure that all Certified Food Manager certifications are registered with the city. To do so, take certificates down to 1901 S. Alamo, Monday through Friday between 7:45am and 4:30pm to have certificates registered for a fee of $15.45.
  • Cold hold unit (#6) had pooling water along the bottom. Inside of unit needs to be cleaned and sanitized.
  • Cold hold unit (#6) may need to be serviced. Unit must be able to maintain a temperature of 41 degrees F. Observed large block of ice on fan.
  • Cold hold unit (#6) did not have a thermometer. All cold hold units that have potentially hazardous foods must have a thermometer to ensure the proper temperature of 41 degrees F is being maintained.
  • Establishment did not have food permit or routine inspection posted. Ensure that the most current Routine Food Inspection Report and Food Permit are posted in public view.
  • Observed personal drinks above the prep sink and a cell phone above prep area. Ensure all personal drinks are in a cup with a lid and straw and are stored below and away from all food and food prep areas.
