The rear exit is currently blocked as it leads to the back house that had burned down. The back house is condemned and will be demolished. Being such, the door is required to have a self closing mechanism once the house is demolished to be in compliance with the food service sanitation managers code.

Discussed the presence of the basement, according to the owner, there will not be storage of the basement.  There will be an ice machine and cooler provided to the establishment.

The 'kitchen' is only to be utilized for a DRY STORAGE area only. Only single service articles and packages are allowed to be stored. If other items found, then the hand wash sink and three compartment sink must be put in order.

Quats is the sanitizer that will be used in the establishment.

This establishment has been given final approval to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.
  • Non-food contact surfaces designed, constructed, maintained, installed, located.
    1) The cabinets and doors at the bar are in disrepair. 2) The wood panel behind the sink and the ice machine are made of unsealed wood.
    1) Repair the cabinets. 2) Seal the wood.
    Non-food contact surfaces such as splash areas or areas which otherwise require frequent cleaning, shall be designed and fabricated so as to be smooth, washable, free of unnecessary ledges, projections, or crevices, and to be readily accessible for cleaning, and to be of such material and in such repair as shall be easily maintained in a clean and sanitary condition.
  • Thermometers, gauges, test kits provided
    There were no quat test strips, chlorine test strips were present.
    Provide the appropriate test strips.
    A test kit or other device that accurately measures the parts per million concentration of the sanitizing solution shall be provided and used.
  • Food contact surfaces of equipment and utensils clean
    Clean and sanitize all food contact surfaces prior to use.
    Equipment and utensils shall be rinsed free of detergent and abrasives.
  • Non-food contact surfaces clean
    Clean and sanitize all non food contact surfaces prior to opening.
    Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.
  • Floors properly constructed, clean, drained
    Clean all floors and maintain clean.
    Floors, floor coverings, mats, and duckboard shall be maintained clean.
