    A sticker was found on a sliced tomato at the top portion of the prep cooler in the kitchen.
    Protect food items at all times. The tomato slices have been discarded.

    The handles for both ice scoops at both ice bins at the bar were found touching the ice.
    Ice-dispensing utensils shall be stored on a clean surface or in the ice with the utensil's handle extended out of the ice.
    The scoops have been relocated during the inspection.

    The floor in the corner next to the mop sink in the kitchen is soiled.

    Three containers in the kitchen, which have a white food substance inside, are not labeled with their contents. All foods that are not stored in their original containers and whose identity may be mistakable, shall be labeled with the common or usual name of the food. The food containers are in the process of being labeled.
  • Foods handled with minimal manual contact
    The chef was seen handling ready-to-eat food products. He had washed his hands prior to. Employees shall handle ready-to-eat food only with suitable utensils such as deli tissue, spatulas, tongs, or single-use gloves. This was discussed during the inspection and gloves are now being utilized as a barrier.
  • Clean clothes, hair restrains
    The female employee, while handling food in the kitchen, did not have her long hair restrained. Employees shall use effective hair restraints to prevent the contamination of food or food–contact surfaces. Restrain long hair while handling food items.
  • Non-food contact surfaces designed, constructed, maintained, installed, located.
    The hand sink, connected to the wall, to the right of the three-compartment sink, is missing caulking on the top portion. Equipment shall be sealed to the adjoining equipment or adjacent walls or ceilings if exposed to seepage or splash. Reseal this area.

    The men's restroom has a urine odor and the floor appears to be soiled around the urinal. Maintain all restrooms clean. Clean where needed to remove the odor.

A scored 30 day inspection cannot happen at this establishment at this time, due to Po-Boys not currently being open for business. A consult is occurring today due to new equipment being added and needing to be inspected and approved  by this department. The new cooler at the cookline has an air temp of 38 degrees F and the ice machine is clean and in good repair. Monitor temperatures and maintain cleanliness throughout the establishment.

This establishment is scheduled to open for business on November 11, 2014
