HACCP: Discussed and given HACCP handout on handwashing techniques and glove usage.
  • In-use food dispensing utensils properly stored.
    Found ice chest with the scoop stored with the handle in contact with the ice.
    Ice-dispensing utensils shall be stored on a clean surface or in the ice with the utensil's handle extended out of the ice.
  • Food contact surfaces of equipment and utensils clean
    The soft drink nozzles to the soft drink machines were found to be soiled.
    Please wash, rinse, and sanitize all drink nozzles on a routine basis to maintain clean.
  • No Certified Manager Present
    Per manager, the certified food manager certificate for the owner is not available at this time.
    Original certificates of certified managers shall be maintained at the place of business and shall be made available for inspection.

Owner has taken a CFSSM course.

The exterior temperature gauge on the walk in cooler is broken.  Another thermometer is located within the unit.

Employees are wiping down surfaces with windex to remove construction debris.  WINDEX IS NOT A SANITIZER.  WINDEX LEAVES A TOXIC RESIDUE ON SURFACES AND IS NOT APPROPRIATE FOR FOOD CONTACT SURFACES. All food contact surfaces must be cleaned and sanitized with an approved sanitizer before placed into use.

Establishment has been given final approval to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.

$150 cash has been paid for the 2015 license fee.

The 2016 license fee in the amount of $350 is still owed.  This fee must be paid before December 31, 2015.
  • Food protection during storage, prepartion, display, service, transportation
    Ice in ice machine soiled with construction debris.
    Clean machine and then drain the ice.  Sanitize the interior of the machine before making new ice.
  • Food contact surfaces of equipment and utensils clean
    Some surfaces such as ice machine have construction dust stil present.  
    Clean and sanitize surfaces.
