Observed wet wiping cloths not stored in their sanitizer buckets. Sanitizer buckets were not made up. Corrected sanitizer buckets were made and wiping clothes were put in them. Keep wet wiping clothes in the wiping cloth buckets between uses. Moist cloths or sponges used for cleaning non-food-contact surfaces of equipment such as counters, dining table tops and shelves shall be stored in the sanitizing solution between uses.

Discussed the outside bar area. The outside bar is not going to be used for service. If you wish to begin utilizing the outdoor bar it must be inspected prior to doing so.
Sanitizer used is Chlorine. Discussed sanitizer concentrations.
Not major violations seen at this time. Facility has approval to open in accordance with Chapter 10, Food Safety, of Peoria County Code.

The interior of the beer cooler and the racks & crates inside are soiled. Clean and maintain clean. Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

The drain lines for the soda gun holsters were not hooked up. Hook up before opening. Drain lines from equipment shall not discharge waste water in such a manner as will permit the flooding of floors or the flowing of water across working or walking areas or into difficult-to-clean areas, or otherwise create a nuisance.

No waste receptacles with covers were available in rest rooms. Provide waste receptacles with covers. Easily cleanable, covered receptacles shall be provided for waste materials in toilet facilities including vestibules.

Test strips to measure Chlorine sanitizer concentration were not present in establishment. Ensure test strips are maintained in establishment and used. A test kit or other device that accurately measures the parts per million concentration of the sanitizing solution shall be provided and used.

1) Interior of soda nozzles and holders in bar have heavy soil build up. 2) Interior lip of ice machine has mold growth. Clean and sanitize all food contact surfaces as often as needed to maintain clean. The food-contact surfaces of all equipment shall be kept free of encrusted grease deposits and other accumulated soil.

Left urinal and toilette in men's room do not flush properly. Ensure all plumbing is maintained in good repair. Plumbing shall be sized, installed, and maintained in accordance with applicable provisions of the Illinois State Plumbing Code.
