    Maintain all food-contact surfaces smooth and easily cleanable.

    A few sleeves of single-service cups were being stored on the floor in the back storage room.
    Protect single-service articles at least 6" up and off the floor for protection.

    Amber White has taken the Food Manager Certification course but has not received her certificate yet.
    Original certificates of certified managers shall be maintained at the place of business and shall be made available for inspection.
