Chef Bruce Ucán, a Mexican of Mayan descent, delights guests with creative dinner specials and seasonal desserts that enhance the consistent quality of his food, which combines the flavors of his native land with an approach to cooking that is upbeat and innovative. Roasted lima beans, seafood bisque, and the tasty handheld tortillas with different toppings known as salbutes are just some of the items that have gained him a loyal following in the Derby City. Sustainability is at the core of his business, and whenever possible, local produce, fish, and meat are featured on the menu; in addition, only compostable take-out containers and nontoxic cleaning supplies are used in the restaurant.
