Great recipes on here.

I stuff mine with black beans, rice, and corn and sauteed onions and then pour stewed tomatoes over the top before I bake them.

Now I want this. It's been a while.

The only stuffed pepper I like is a cheese Chile relleno!

IMO, bell peppers don’t taste good cooked, unless very lightly in a stir-fry.

8 sweet bell peppers

one diced bell pepper

one clove minced garlic.

4 green onions m

1/2 cup carrots minced

1 cup brown rice (or white, wild or quinoa) Use frozen for a very easy meal.


Jar of your favorite high quality jarred tomato sauce.


Cuman, turmeric, a dash of nutmeg, chopped flat leaf parsley

1. Sautee minced vegetables in evoo or your favorite vegetable oil.

2. Sautee ground meatless. Add spices.

3. combine with rice.

4. Set aside.

5. lightly boil peppers until fork tender.

6. Remove seeds and insides.

7.Cover casserole with tomato sauce.

8. fill with peppers - stuff.

9. Top with more tomato sauce.

10. Bake until bubbly.

variations - top with shredded cheese for the last ten minutes, instead of ground meatless, use lentils, use half ground meatless and lentils, swap out the ground meatless for Quorn or Gardien chicken substitute - use poultry seasoning and a cream sauce. Add paprika for Hungarian stuffed pepper.

Enjoy!
