You know when you're just feeling uninspired by your usual ideas for meals? Yeah.

Today I am interested in things that are very easy to make. If you Google "fast recipes", you usually come up with things that take 30 minutes of prep time. I want faster things.

So...what are your favorite super simple recipes, even if they are not fully homemade?

Fresh squeezed organic OJ (get a juicer at a thrift store for $2, and 2-3 organic oranges), nuked organic soup in a can or box, one slice of organic gluten free toast w/ a little organic PB, a non GMO apple or other non GMO fruit of your choice (optional), a mixed green organic salad (bought already mixed and washed) w/ avocado, almonds, olives, and Greek peppers w/ a touch of your favorite dressing, and the usual vitamin supplements. Shouldn't take more than 10 minutes to throw together, and w/ the avocado, PB and nuts, it will easily hold you until supper.

If I don't eat like this and ride my bike I'm constantly hungry. Walmart and Trader Joe's has cheap organic produce.

Microwave some frozen vegetables, toss it over some leftover rice or quinoa, add some seasonings and a splash of seasoned vinegar (optional). Filling, quick and tastes great.

Oh, frozen waffles are another guilty pleasure.

Chickpea salad sandwiches! Or you can do it with tofu. I make sure to add celery and pickle to mine with mustard and a touch of mayo. I also will make a big pasta or rice salad and eat for lunches. Ina Garten has a great brown rice salad. Tomato and mozz sandwiches or salads. I round everything out with raw veg and hummus.

When I get tired of the bean and rice entree dish, and consuming homemade dishes that take more than 30 minutes, I sometimes splurge on the "substitutes," that includes gardein and just Tofurky sandwiches. It's amazing what you can come up with just making simple sandwiches. Just yesterday I made a vegetarian Cuban sandwich. And it tasted just like the last time I had one, which was awhile. Grilled cheese is also another favorite, paired with store bought soup. Some Daiya chedder shreds, nachos, meatless grounds and you have nachos.
