I make pancakes from leftover potatoes, but different. I add egg, sauteed onion and little potato starch (finely shredded cheese optional). Cover with bread crumbs and pan fry.
Or add fresh farmers cheese and make sort of gnocchi.

Fantastic also when you mix it with meat.

I subscribe to the New York Times cooking website (seperate from the news site). They have some pretty awesome recipes. And we find new things to try all the time. Just got a notice this morning for Go-chu-jang Potato Stew. Looks like a spicy potato soup with potatoes, kale, onions and Go-chu-jang paste- all of which we have.

That's going to be dinner tonight. And for the life of me I don't know why CD won't allow Go-chu-jang to be spelled out. It's just spicy bean curd, lol.

My favorites have already been listed like Food.com and some of the others. I discovered a new to me site where she has really good recipes that me and my family like. Its Mel's kitchen cafe...fun to look at all the recipes and drool. I always save and make a ton of her recipes.
