I'm going to have a long layover at MSP next week. If there are any interesting or unusual parts of the airport, I wouldn't mind checking them out.

Not interested in leaving security, I've been to Minneapolis and the MOA.

Any suggestions?

From the lack of responses I would say there aren't any. There is an observation area to watch planes land but that is outside of security. There are quite a few shops, etc. to pass the time. I am going to guess that since you don't want to go through security you are not checking luggage. There are lockers you can put bags in so you don't have to take them back through security if you leave. The lightrail goes from the airport with stops at the MOA, Fort Snelling and into downtown Minneapolis. If the layover is long enough, maybe doing something like this would work?

I heard something about a small post-security observation deck in Concourse D, so I might check that out.

As I said, I've been to MOA and downtown and I'm not really interested in that.

Lots of big airports have oddities scattered around (DIA is a good example) and I wondered if there was anything funny at MSP. No big deal, if not I can always get a little work done.

There are plenty of decent shops and fairly unique restaurants at MSP, at least from an airport perspective, but there isn't anything that could really be classified as unusual.

here is a link to the airport coupon booklet. See if there is anything in there that is interesting to you as most of the restaurants and stores have at least 1 coupon in this book.

There's a lot more to do at MSP than some other airports. I don't know how some airports get away with having little to no food post security.

It is mostly restaurants and shops. I do have to give MSP credit,... there is one restaurant at the corner of concourse E that actually has healthy food. As a diabetic, I struggle to find places to eat on the go while on a trip.

The observation deck is accessed by a set of stairs on the left side as you approach the 6 gates that make up Concourse D....
