Personally I chose to work evenings and chose to work Sunday - Thursday because those were the busiest evenings where I worked and I was rarely bored while at work because there was always something going on and no upper management around to pester me.
Tell the truth. That way if they hire you, and later expect you to work nights and weekends, you can say, "I'm sorry, I was hired with the understanding that I was not available during those hours/days."
I would say "Nights and weekends are possible for me..Are the compensation parameters of it something we discuss now or after I'm hired?" ...Or... I didn't plan on working nights and weekends. But what incentives does (the company) offer on top of regular pay for accommodating that request? Having them justify your lack of "availability" is way better then just saying NO. Plus you get to see if it would be worth it if you did do it.

Better say NO and demand a 9-5 with paid overtime. I mean if you get job interviews every week. If you don't get any activity, and you need the experience, then it's a different story.
