+1 Chaofan regarding the cookies, great idea! I love cookies & I also need to get more fiber into our diets, so definitely trying this.
I also made bean salad with the garbanzos, green beans, black beans, red beans, chopped mini-peppers, red onion, red wine vinegar, dash of balsamic, dash of evoo, garlic powder, s/p, very, very good.
