Over cooked chicken (grill, broil, cream, dressing)

Due to inattention, I boiled a couple of large chicken breasts too long. Result? Dry and tough.
I can grind some of it up for chicken salad sandwiches but, what else?
Any suggestions ?
I wouldn't "grind" it up, but I might chop it up into small pieces for chick3n salad or chicken chili. I might slice it for sandwiches with lots of mayo. Ranch dressing, etc and lettuce, tomato, etc. Quesadillas maybe - dipped in salsa.
But honestly, I'd probably use it as a special treat for the dogs in our neighborhood; ours is allergic to chicken.

Use it for an Enchilada Casserole. Buy a can of enchilada sauce, and cut or shred the chicken. In a pan put a thin layer of the sauce, then a layer of corn tortillas, then a layer of the chicken, a layer of shredded jack cheese, pour sauce over that, and repeat 1-2 more times. At the end sprinkle shredded cheddar on top, cook in the oven 1/2 hour at 350 covered in foil and serve with sour cream and/or guacamole.
Dice it up, Heat it in a sauce, home made or cream of whatever mixed with sour cream and seasoning or parmesan and serve over rice. I've been there. But it is save able. The enchilada idea sounds tasty too.
Lots of good suggestions here, but no one has addressed the elephant in the room. Why would you boil chicken breasts? Pan fry them, grill them, roast or broil them...... but boiling them would be the last thing on my list (actually, it wouldn't be on my list at all).
Please set a timer and take it with you! Personally I would bite the bullet and feed it to critters.
