This! I was served bad broth, fruit flavored gelatin (yellow or green), and cheap tea... for days and days. It's been nearly fifty years and I've never eaten Jell-O again.

I got nothing but chicken broth for 11 meals in a row in the hospital once. While that was medically wise, I've avoided broth ever since.

Gelatin (and Jello) is made by boiling down beef hooves and leftover bits. ugh.

Yeah, I guess there's a vegan gelatin but don't know how well it works or tastes. I would think it'd be plain for use with other things and flavorings.

Agar agar. I use it on the rare occasions I need something gelatinous--like a bloody brain for Halloween.

It sets at a lower temp than jello, so it's more stable. Flavorless, you can add what you like.
