Kabobs are almost always a hit. Just set out bowls full of chopped up food, and people will fill up their sticks with their favorites.
Good choices are sausage, steak, ham, red onions, pineapple, mushrooms, cherry tomatoes, squash, etc. Apples and mandarin orange slices might be good too...
Cut a line down the middle of the "forearm." Cut the elbow webbing (similar to that between your thumb and index finger.)
Season with a mix of: sea salt, a lot of cracked pepper, coriander, chili powder and cayenne.
place "meat" side down on a hot charcoal grill. leave the lid off for 10-20 seconds, then cover with the vent open. This sears the skin away, minimizing it's presence.
Yes Yes on Portobello Mushrooms.....brush with Olive oil mixed with garlic powder/fresh crushed garlic and grill.....on a bun... yummy! I like to make thin Turkey burgers with Portobello on top.
You might want to put some fresh green beans (washed and unbroken) in any good vinegarette.....balsamic and herb is good....sesame and herb, etc. Let the green beans marinate for a few hours and then put on the grill (can also cook these on a George Foreman Grill). Asparagus can be done like this too!
Definitely portobello mushrooms and kebabs. Most definitely have to have corn on the cob!
With the kebabs I think it is better to make your your own especially with beef, Whenever we bought them prepackaged-and these were in a excellent supermarket the beef was always tough and chewy.
