I agree with Mount Dora. Been here a good 8 years. While there is a certain amount of growth, it is very controlled, and the city does all that it can to maintain its small town charm. I'd give it a look.
If that doesn't work, try nearby Eustis and Tavares. It's close to where you are, but isn't influenced by the general growth Orlando is experiencing.

No way mt dora would be a good choice. Once the loop around orlando is finished mt dora area will explode in population

you may want to consider Lake City definite "Southern" town and conservative church goers are numerous. Still in Florida, not likely to grow out of control. It gets too "cold" in winter to attract hordes of snowbirds, not on the coast.

They have many of the retails chains, so you wont have to leave town for shopping. But convenient to Gainesville or Jacksonville for additional or specialized shopping, airport, big hospitals and other "city ammenites". Not too far from where you live now for any family connections. Right on I-75 and I-10 so you could easily drive to Atlanta, New Orleans, Orlando and Tampa.

You are close to Atlantic Coast, Gulf Coast and lots of Springs for recreation.

Live Oak is similar but a smaller town.
