We always have fresh spinach, arugala and kale, and it goes into everything: soups/stews, marinara sauces, salads, sandwiches scrambled eggs, as a bed for meat..... oh! and smoothies!

I get it, it's not leafy, but it's my green vegetable. Some of the other ones have oxalates and I avoid them.
The ones from this list I eat the most are broccoli, cabbage and romaine and arugula. And bok choy when I think of buying it. I avoid the ones that are high oxalates.
