The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Observed food/dirt build up inside floor drains in prep area. Instructed manager to clean interior of all unclean floor drains and maintain.
The walls and ceilings shall be in good repair and easily cleaned. Observed dust build up on ceiling tiles and vent covers above rear prep/dishwash area and unclean walls at same. Must clean and maintain all unclean walls and ceiling tiles/vent covers.
All food not stored in the original container shall be stored in properly labeled containers. LABEL AND DATE ALL PREPARED FOODS IN THE COOLERS.
The walls and ceilings shall be in good repair and easily cleaned. REPLACE THE MISSING CEILING TILE ABOVE THE 3 COMPARTMENT SINK.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. REPLACE THE MISSING LIGHT SHIELD IN THE REAR PREP AREA.
Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. STORE ICE SCOOPS IN A CONTAINER OUTSIDE OF THE ICE BIN OR ICE MACHINE. STORE WET WIPING CLOTHS IN SANITIZER BUCKETS INSTEAD OF ON COUNTERS, PREP TABLES, ETC.
(7-38-005A) INADEQUATE FOOD PROTECTION. FOUND A SMALL BLACK CONTAINER OF CUT LEMONS, STORED IN A CORNER OF THE ICE BIN, USED FOR ICED WATER CONSUMPTION OF CUSTOMERS. INSTRUCTED TO CLEAN/SANITIZE BIN & REPLACE ICE. All food should be properly protected from contamination during storage, preparation, display, service, and transportation.
CEILING VENT AT DISHROOM AREA & COMPRESSSOR/CONDENSER OF WALK-IN COOLER MUST BE FREE OF DUST BUILD-UP. The walls and ceilings shall be in good repair and easily cleaned.
MISSING OR CRACKED LIGHT SHIELDS AT DISHROOM MUST BE REPLACED. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.
ANY UNNECESSARY ARTICLES STORED UNDER FRONT SERVING COUNTERS MUST BE REMOVED & THIS AREA SHOULD BE BETTER ORGANIZED. All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors.
