All employees handling food shall be required to use effective hair restraints to confine hair.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Replace the unsanitary, peeling window baseboard bumper and seal the exposed insulation above the northeast daycare area.
Clean and maintain the dirty kitchen floor drain.

THE HIGH TEMPERATURE DISH MACHINE HAS A 174 F FINAL RINSE TEMPERATURE. Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. REPAIR THE FINAL RINSE TEMPERATURE.
The walls and ceilings shall be in good repair and easily cleaned. THE 2ND FLOOR KITCHEN CEILING HAS OVER 12 EXPOSED PIPES ABOVE THE FOOD PREPARATION AREA, ENCLOSE OR SEAL THE PIPES/AREA SO IT IS SMOOTH SANITARY AND EASY TO CLEAN.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. INSTALL SHEILDS ON ALL GLASS BULBS IN THE FOOD PREPARATION AREA.
THE DISH MACHINE LEAKS, REPAIR THE MACHINE.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. SEAL THE GAPS AROUND THE GREASE TRAP SO THE AREA MAY BE KEPT CLEAN.

All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.MUST CLEAN AND SANITIZE EXTERIOR OF REFRIGERATOR AND FREEZER AT KITCHEN.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.MUST CLEAN ALL FLOOR CORNERS IN ALL CLASSROOM TO REMOVE DUST.MUST CLEAN AND SANITIZE ALL FLOOR DRAINS THROUGHOUT ENTIRE PREMISES.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.MUST ADJUST HOT WATER VALVE AT SINKS IN THE SPRUCE CLASSROOM.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors.MUST DECLUTTER AND BETTER ORGANIZE ALL STORAGE AND UTILITY CLOSET AREAS. MUST ELEVATE ITEMS 6 INCHES OFF THE FLOOR AT ALL TIMES.
