Must repair/replace damaged door gaskets. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Observed slight lime build up on interior of ice machine and dust build up/food build up on cookline ventilation hood and filters. Must clean and maintain all unclean equipment. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. Must provide ceiling light bulb covers and end caps at front prep and provide light bulb for ventilation hood at same. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Must repair leaks at the following locations- main bar 3-compartment sink hot water valve, 2-compartment sink faucet, 2nd floor bar handwash bowl pipe and washrooms handwash bowl knobs missing.
