The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN THE WALLS OF THE REAR SUSHI PREP AREA OFF OF THE MAIN STORE PREP AREA. MUST SEAL THE WALL OPENING ABOVE THE SINK IN THE REAR SUSHI PREP AREA.

All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. REPAIR THE DOOR FOR THE 2 DOOR PREP COOLER SO THAT IT CLOSES PROPERLY.

MUST PROVIDE THERMOMETERS AT BOTH 2DR COOLERS IN SUSHI PREP AREA AT ALL TIMES.
MUST REPAIR/REPLACE THE BOTTOM OF THE PREPARED FOOD FREEZER DOOR THRESHOLD.
MUST CLEAN FLOOR AT CORNERS UNDER EXPOSED HANDSINK AT SUSHI PREP AREA TO REMOVE FOOD DEBRIS.
MUST CLEAN AND REMOVE EXCESS DUST BUILD-UP FROM FAN GUARD COVERS IN WALK-IN COOLER. MUST REMOVE ICE BUILD UP AT WALL CLOSEST TO THE DUST FAN COVERS.
