FOUND DUMSPTER LIDS WIDE OPEN, UNABLE TO CLOSE DUE TO OVERFLOWING GARBAGE. ALSO, NOTED GARBAGE, REFUSE, LITTER SURROUNDING SAID DUMPSTERS. INSTRUCTED TO CLEAN, MAINTAIN, AND RECOMMEND ADDITIONAL GARBAGE PICKUPS TO ACCOMODATE FLOW OF GARBAGE FROM OPERATIONS. SERIOUS 7-38-020 ISSUED.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. PREVIOUSLY CITED IN APRIL FOR GARBAGE AND WAS INSTRUCTED TO INCREASE GARBAGE PICK-UPS. MANAGER ON SITE STATED THAT ADDITIONAL PICK-UPS WERE SCHEDULED. The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. CLEAN THE VENTS THROUGHOUT PREMISES HAS DUST BUILDUP.

THE REAR KITCHEN WALLS ARE DIRTY AND THE PAINT ON THE PIPES IS PEELING, CLEAN AND RESEAL THE WALLS AND CLEAN THE YELLOWING WALLS ABOVE THE TURBO CHEF OVENS.
THE FAN SHIELDS ARE VERY DIRTY IN THE WALK IN COOLER, CLEAN AND SANITIZE THE FANS SHIELDS.
THE WALK IN COOLER FLOORS ARE ENCRUSTED WITH SPILLED PRODUCT AND THE KITCHEN FLOORS ARE DIRTY AND STAINED, CLEAN THE FLOORS FROM CORNER TO CORNER AND RESEAL THE KITCHEN FLOOR SO IT IS SMOOTH AND SANITARY.
THE ICE MACHINE DISPENSING CHUTES ARE FULL OF BLACK BUILDUP, MACHINE TAGGED HELD FOR INSPECTION UNTIL CLEANED, SANITIZED AND THEN RE-INSPECTED BY THE CHICAGO DEPARTMENT OF PUBLIC HEALTH.
THE DRYING RACK FOR WASHED DISHES IS TOO SMALL. INSTALL AN ATTACHED (STAINLESS METAL) DRAINBOARD TO THE THREE COMPARTMENT SINK.
THE TWO TURBO CHEF OVENS IN THE REAR KITCHEN HAVE AVENT ABOVE BUT NO VENTILATION HOOD. THE UNITS ARE 6400 WATTS EACH. INSTALL PROPER VENTILATION TO CITY CODE. THE MOP SINK IS FILTY AND DRAINING SLOWLY, CLAEN UP AND REPAIR THE SINK.
THE LIGHTING ABOVE THE REAR PREP AREA IS NOT SHIELDED, INSTALL LIGHT SHIELDS.
