All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Observed accumilated food debris inside prep coolers rubber doors gaskets. Must detail clean and maintain unclean equipment.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Must detail clean and maintain floor under and around all equipment, along all walls and corners throughout basement.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. Must provide and install light end covers thoughout basement prep area.

All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. DEFROST AND MAINTAIN THE 1 DOOR STAND UP FREEZER. REPLACE THE TORN DOOR GASKET AROUND THE DOOR OF THE COCA-COLA COOLER NEXT TO THE PIZZA DISPLAY CASE.

All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. PROVIDE A THERMOMETER INSIDE OF THE COCA COLA COOLER USED TO STORE DESSERTS.
