THE FOLLOWING FOODS WERE OBSERVED IN THE PREP COOLER: SAUSAGE AT 44.2F, ROAST BEEF AT 46.9F, SALSA AT 44.6F. ALSO, SOUR CREAM CONTAINERS STORED ON THE CUSTOMER SERVICE LINE AT 53.0F. MANAGEMENT VOLUNTARILY DISCARDED 70# OF FOOD WORTH $350. CRITICAL VIOLATION 7-38-005A.
OBSERVED THE REAR PREP AREA HANDSINK WITHOUT PAPER TOWELS DURING THE INSPECTION. MANAGEMENT PROVIDED PAPER TOWELS AT THE HANDSINK AT MY REQUEST. MANAGEMENT INSTRUCTED TO MAINTAIN ALL HANDWASHING SINKS WITH SOAP AND PAPER TOWELS AT ALL TIMES. CRITICAL VIOLATION 7-38-030.
