All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FOLLOWING NEED CLEANING: INTERIOR AND EXTERIOR OF FRYERS, SHELVES, COUNTERS, BEVERAGE MACHINES, CABINETS
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED MANAGER TO GROUT LOOSE FLOOR TILES IN PREP AND DISHWASHING AREAS. REPLACE/REPAIR LOOSE THRESHOLD UNDER WALK-IN COOLER DOOR. FLOORS NEED CLEANING INSIDE WALK-IN COOLER, UNDER STORAGE SHELVES, FRYERS (GREASE SPILLS) AND IN REAR STORAGE AREA (DEBRIS). REMOVE ALL STANDING WATER ON FLOORS ALONG SOUTH WALL NEAR OFFICE, BETWEEN LOOSE FLOOR TILES IN PREP AND DISHWASHING AREAS TO PREVENT PEST BREEDING.
The walls and ceilings shall be in good repair and easily cleaned. REPLACE DAMAGED TILES ALONG BASEBOARDS NEAR UTILITY SINK AND IN ALL AREAS.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. REPAIR LEAKING FAUCET ON 3-COMP SINK.

FAUCET HANDLES OF EXPOSED HANDSINKS, DOOR HANDLES OF ALL COOLERS, FREEZERS, BEVERAGE SYRUP LINES AND BOXES NOT CLEAN, EXCESSIVE DEBRIS. INSTD TO CLEAN AND MAINTAIN.
WALK-IN COOLER DOOR THRESHOLD IN POOR REPAIR LOOSE, NOT TIGHT FITTING, CAUSING STANDING WATER AND DEBRIS ACCUMULATION. REPAIR SAME, HAVE TIGHT FITTING. FLOOR THRU-OUT UNDER AND BEHIND HEAVY EQUIPMENT NOT CLEAN. CLEAN SAME.
