All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. OBSERVED INTERIOR ICE MACHINES WATER RESERVOIR WHERE ICE IS MADE, WITH BLACK, SLIME SUBSTANCE AND EXCESSIVE RUST DRIPPING INTO READY TO EAT ICE. MACHINE TAGGED HELD FOR INSPECTION AND MUST NOT USE UNTIL C.D.P.H. CONTACTED FOR INSPECTION AND TAG REMOVAL. ALL ICE DISCARDED.
A separate and distinct offense shall be deemed to have been committed for each Minor violation that is not corrected upon re-inspection by the health authority. All utensils shall be thoroughly cleaned and sanitized after each usage. OBSERVED APPROXIMATELY 30 TO 40 DIRTY PLATES FROM PREVIOUS DAYS SERVICE STORED DIRTY ON SHELVING IN FRONT SERVER STATION AREA. All utensils shall be thoroughly cleaned and sanitized after each usage. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INTERIOR UNUSED COOLER AT FRONT BAR WITH MOLD, MUST CLEAN. DIRTY INTERIOR COOLER USED FOR DRY PEPPER STORAGE, MUST CLEAN.
The walls and ceilings shall be in good repair and easily cleaned. WALLS AND CEILING IN THE FOLLOWING AREAS WITH HOLES, OPEN CRACKS/CREVICES. AT DRY STORAGE HALLWAY, AROUND LIGHTING IN SAME HALLWAY.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MUST PROVIDE FOR THE FOLLOWING AREAS, THROUGHOUT DRY STORAGE HALLWAY, IN WALK-IN FREEZER, AT REAR PREP AREA.
