All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. SHELVES IN WALK-IN COOLER IN NEED OF CLEANING TO REMOVE BUILD-UP. MUST CLLEAN AND MAINTAIN.
