All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. LIGHT BULBS BURNED OUT ABOVE PREP AREA (X2). MUST REPLACE LIGHT BULBS.

All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN/REPLACE CUTTING BOARD IN PREP AREA
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. MUST INVERT MULTI-USE FLAT WEAR BY BUFFET AREA, TO PROTECT FROM CONTAMINATION UNTIL USED

Observed live fruit flies in the kitchen areas.Approximately 15 live fruit flies were observed around crates of onions,dry foods storage stored on shelving in kitchen.Detail clean,sanitize affected areas,remove said flies,provide containers with lids to minimize pest problem,remove unnnecessary articles from said area.Pest control service now reccomended.Serious violation 7-38-020.
Remove aluminum foils from the bottoms of prep tables in kitchen areas must be smooth,easily cleanable surfaces.
Detail clean,maintain interiors of refrigeration units,stoves,ovens,tops and bottoms of work tables,dry storage shelvings.
Floors beneath the cooking stove,buffet table are dirty,clean floors in detail.
Hood,filters above cooking equipments require a detail cleaning.
All food stored in coolers must be dated & labeled.Consumer advisory must be posted.
