All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN AND MAINTAIN RUBBER GASKET WITH DRIED FOOD DEBRIS AND BLACK MOLD-LIKE BUILD-UP AROUND PREP COOLER DOORS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN FLOORS ALONG THE WALLS AND IN ALL CORNERS THROUGHOUT PREP AREA ESPECIALLY UNDER AND AROUND COOKING EQUIPMENT WITH GREASE BUILD-UP AND ALSO MUST CLEAN FLOOR DRAINS IN PREP AREA.
The walls and ceilings shall be in good repair and easily cleaned. INSTRUCTED TO CLEAN WALLS BEHIND 2 AND 3 COMPARTMENT SINK.------MUST CLEAN CEILING VENT COVER WITH DUST AND GREASE BUILD-UP IN FOOD PREP AREA AND IN WASHROOM.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. NOTED TOP LOADER SOFT SERVE/ICE CREAM MACHINE WITHOUT HOT AND COLD RUNNING WATER. INSTRUCTED TO PROVIDE HOT AND COLD RUNNING WATER ON TOP OR REMOVE FROM PREMISES.
