Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. CLEANING TOWELS MUST BE PROPERLY STORED.
All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN-SANITIZE; COOLERS, CHEST FREEZERS, LARGE MIXERS, DRIED FOOD STORAGE CONTAINERS, BOTTOM OF PREP TABLE, CARTS, STOVE AND FRONT SERVING AREA CABINETS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST REPAIR FLOOR THRU-OUT PRODUCTION AREA, REPLACE FLOOR TILES FRONT AREA AND CLEAN FLOORS THRU-OUT, UNDER, BEHIND EQUIPMENT AT CORNERS AND ALONG WALLS.
The walls and ceilings shall be in good repair and easily cleaned. MUST REPAIR WALLS AND CEILINGS THRU-OUT PREMISES, PAINT WALLS AND SEAL OPENINGS TO PREVENT PEST ENTRY.
Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated. MUST PROVIDE A SELF-CLOSING DEVICE FOR WASHROOM DOOR.
