All cold food shall be stored at a temperature of 40F or less. All hot food shall be stored at a temperature of 140F or higher. FOUND AN ICE CHEST COOLER OUTSIDE NEAR BBQ GRILL WITH THE FOLLOWING POTENTIALLY HAZARDOUS PRODUCTS AT IMPROPER TEMPERATURE: RAW HAMGURGER PATTIES 48 DEGREES, RAW ITALIAN SAUSAGE 45 DEGREES, SLICED TOMATOES 48 DEGREES, POTATO SALAD 47 DEGREES. ALL FOOD WAS DISCARDED AT TIME OF INSPECTION. TOTAL COST $87.85 26 LBS CRITICAL VIOLATION 7-38-005(A) CITATION ISSUED. POTENTIALLY HAZARDOUS FOOD AT IMPROPER TEMPERATURE.
All food should be properly protected from contamination during storage, preparation, display, service, and transportation. FOUND UNATTENDED BBQ GRILL WITH FOOD OUTSIDE OF ESTABLISHMENT. ALL FOOD MUST BE PROTECTED AT ALL TIMES FROM THE ELEMENTS. ALL COOKING MUST BE DONE WITH PROPER PROTECTION. NO OUTSIDE GRILLING. INSTRUCTED MANAGER TO DISCONTINUE OUTSIDE GRILLING. SERIOUS VIOLATION 7-38-005(A) CITATION ISSUED. FOOD NOT PROTECTED DURING STORAGE, PREPARATION, DISPLAY.

FOUND THE ELBOW PIPE AT HANDSINK IN REAR KITCHEN WITH A HOLE, WHERE WASTE WATER GUSHES, EACH TIME THE FAUCETS ARE TURNED-0N; MUST FIX & MAINTAIN. When toilet and lavatory facilities are provided for the patrons of food establishments, such facilities shall be adequate in number, convenient, accessible, properly designed, and installed according to the municipal code.
DOOR GASKETS OF BOTH COOLERS IN KITCHEN MUST BE FIXED/REPLACED-IN POOR REPAIR. All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.
FOLLOWING NEED DETAILED CLEANING: INTERIOR OF 3-COMP SINK AT BAR, INTERIOR PANELS OF ICE MACHINES, SHELVES & FLOORS OF COOLERS, EXTERIOR/INTERIOR OF CONVECTION OVEN & AUTO-FRYER-DUE TO HEAVY GREASE OR FOOD BUILD-UP. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
FLOORS ALONG WALLS THRU-OUT KITCHEN & UNDER THE BAR AREA MUST BE KEPT CLEAN & FREE OF DEBRIS/CLUTTER. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.
WALLS BEHIND THE SINKS & DISHMACHINE IN KITCHEN MUST BE FREE OF GREASE & FOOD STAINS/SPLATTERS. The walls and ceilings shall be in good repair and easily cleaned.
INTERNAL THERMOMETERS NEEDED IN ALL COOLERS-MUST PROVIDE. All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units.
