OBSERVED FOOD DEBRIS/DIRT BUILD UP ON FLOOR UNDER AND AROUND SHELF RACKS IN DRY STORAGE ROOM AND INSIDE FLOOOR DRAINS. INSTRUCTED MANAGER TO CLEAN AND MAINTAIN FLOOR AND INTERIOR OF FLOOR DRAINS.
MUST CALIBRATE METAL STEM THERMOMETERS FOR FOOD HANDLERS AND MAINTAIN.
