All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.OBSERVED THE FRONT COOLER REACH-IN FANGUARD COVER NOT CLEAN, AND CUTTING BOARDS NOT CLEAN INSTRUCTED TO CLEAN AND SANITIZE ALL CUTTING BOARDS AND CLEAN FANGUARD COVER ALSO INTERIOR OF REAR COOLER, FREEZER.
Soiled and clean linens, coats, and aprons shall be properly stored.OBSERVED THE WIPING CLOTHES STORED ON TABLE INSTRUCTED TO STORE IN A CONTAINER WITH 100PPM CHIORINE SANITIZER.

All food not stored in the original container shall be stored in properly labeled containers. MUST LABEL PREP FOODS INSIDE STORAGE COOLER AND DRIED FOOD STORAGE CONTAINERS AT REAR STORAGE ROOM.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. CLEAN MULTI-USE UTENSILS MUST BE PROPERLY STORAGE ON SHELVES.
All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN-SANITIZE; COOLERS, FREEZERS, COOKING EQUIPMENT, BOTTOM PANELS OF PREP TABLES, STORAGE SHELVES AND EXTERIOR OF ICE MACHINE. ALSO MUST REMOVE FOIL COVERING FROM BOTTOM PANELS OF PREP TABLES AND SHELVES.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN FLOORS UNDER EQUIPMENT AT CORNERS AND ALONG WALLS THRU-OUT PREMISES, INCLUDING BASEMENT.
The walls and ceilings shall be in good repair and easily cleaned. MUST CLEAN NORTH WALL NEAR EXPOSED SINK, HOOD AND FILTERS ABOVE COOKING EQUIPMENT.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. MUST PROVIDE ADEQUATE LIGHTING AT REAR DISH WASHING AREA.
