Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens.OBSERVED OLD COOLER NOT BEING USED INSTRUCTED TO REPAIR OR REPLACE.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.OBSERVED SMALL BOX FREEZER TOPS IN POOR REPAIR INSTRUCTED TO REPLACE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.OBSERVED FIRST FLOOR IN POOR REPAIR BEHIND BAR, AND KITCHEN INSTRUCTED TO REPAIR AND OR REPLACE. ALSO BASEMENT DISH AREA FLOOR NEEDS TO BE RESEALED.
The walls and ceilings shall be in good repair and easily cleaned.OBSERVED WALL ACROSS RESTROOMS HAS A HOLE, HOLE IN WALL BY UTILITY SINK IN BASEMENT DISH AREA ALSO . KITCHEN WALL NOT CLEAN, INSTRUCTED TO FILL ALL HOLES AND CLEAN KITCHEN WALLS.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.OBSERVED SLICER AND INTERIOR OF ICE MACHINE LID NOT CLEAN INSTRUCTED TO CLEAN AND SANITIZE THE ABOVE.ALSO OBSERVED 2 UPRIGHT FREEZERS WITH EXCESSIVE ICE INSTRUCTED TO DEFROST AND CLEAN.

All employees who handle food shall wash their hands as often as necessary to maintain a high degree of personal cleanliness and should conform to hygienic practices prescribed by the Board of Health. POOR HYGIENIC PRACTICES, OBSERVED FOOD HANDLER, [CHEF] COMING FROM BACK AREA INTO PREP AREA, PUT ON GLOVES AND STARTED TO COOK BURGER, BUT NOT WASHING HANDS.
