OBSERVED AIR TEMPERATURE INSIDE OF THE BASEMENT WALK-IN COOLER AT 44.9F. UNIT WAS USED TO STORE POTENTIALLY HAZARDOUS FOODS. UNIT TAGGED BY CDPH. INSTRUCTED MANAGEMENT TO MAINTAIN UNIT BELOW 40F. ON 3/25/10, AIR TEMPERATURE INSIDE OF THE UNIT WAS AT 36.5F . HELD FOR INSPECTION TAG REMOVED. CRITICAL VIOLATION 7-38-005A.
All cold food shall be stored at a temperature of 40F or less. OBSERVED POTNENTIALLY HAZARDOUS FOODS AT IMPROPER TEMPERATURES INSIDE OF THE BASEMENT WALK-IN COOLER. OBSERVED CHILI AT 46F, EGGS AT 45.8F, GROUND BEEF AT 47F, STEAK AT 47.8F, HUMMUS AT 46F, HAMBURGERS AT 45F, CREAM CHEESE AT 46F, TURKEY BREAST AT 46F, HALF AND HALF CREAMER AT 45F, SOUR CREAM AT 45.8F, SALAD DRESSING AT 46F, SHREDDED CHEESE AT 46F. MANAGEMENT VOLUNTARILY DISCARDED 500# OF FOOD WORTH APPROX. $1450. CRITICAL VIOLATION 7-38-005A.
All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OBSERVED EVIDENCE OF RODENT ACTIVITY IN THE BASEMENT STORAGE ROOM NEXT TO THE STAIRCASE. OBSERVED APPROX. 50 MOUSE DROPPINGS ON THE FLOOR AND STORAGE SHELVES. MANAGEMENT INSTRUCTED TO CLEAN AND SANITIZE THE AFFECTED AREAS AND CLEAN OUT THE STORAGE ROOM TO PREVENT PEST HARBORAGE CONDITIONS. ADDTIONAL PEST CONTROL SERVICE NEEDED AFTER STORAGE ROOM IS CLEARED AND CLEANED. SERIOUS VIOLATION 7-38-020.
3 COMPARTMENT SINK IN THE PREP AREA IS IMPROPERLY MAINTAINED. OBSERVED WATER BACKING UP INTO THE LEFT AND RIGHT COMPARTMENTS WHEN THE WATER IS RUN IN THE MIDDLE COMPARTMENT. INSTRUCTED MANAGEMENT TO MAKE NECESSARY REPAIRS SO THAT THE WATER DRAINS PROPERLY FROM THE SINK. MANAGEMENT HAD A PLUMBER REPAIR THE DRAIN FOR THE SINK ON 3/25/10. SERIOUS VIOLATION 7-38-030.
All food not stored in the original container shall be stored in properly labeled containers. OBSERVED PREPARED FOODS NOT LABELED. MUST LABEL AND DATE ALL PREPARED FOODS AND THOSE OUTSIDE OF THEIR ORIGINAL CONTAINERS.
