The walls and ceilings shall be in good repair and easily cleaned. Repair the walls in the dish room and behind the hot line so they are smooth and sanitary from corner to corner.
Store wiping cloths in sanitizing solution in between use.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Clean old onions off of the basement floor.
