OBSERVED WASTE WATER BACKING UP FROM FLOOR DRAIN WHEN DRAINING THE 3 COMPARTMENT SINK. CITATION ISSUED, CRITICAL VIOLATION. TAGGED THE 3 COMPARTMENT SINK. INSTRUCTED NOT TO USE UNTIL SERVICED AND DRAINING PROPERLY. FAX LETTER TO 312-746-4240, ATTENTION: BRIAN TURKALY, TO HAVE THE TAG REMOVED. ALL UTENSIL SANITATION MUST BE DONE AT DISHMACHINE.
