All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INTERIOR OF COOLER AT COOK'S LINE, METAL SHELVINGS ON WALLS OF DISHROOM, BOTTOM OF REAR PREP TABLE MUST BE KEPT CLEAN & FREE OF DEBRIS/DUST.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS OF WALK-IN COOLER NEED DETAILED CLEANING.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. aNY SODA CRATE USED FOR STORAGE RACK IN WALK-IN COOLER MUST BE REMOVED/REPLACED, FOR EASY CLEANING.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. LEAKY FAUCET AT 3-COMP SINK MUST BE FIXED.

THE BOTTOM SHELF OF THE STEAM TABLE HAS AN OPENING WHERE FOOD AND DERIS IS ACCUMULATING, CLEAN OUT SAID AREA AND COVER SAID AREA. GREASY DOORS AND SURFACES AROUND THE PREP AREA NEED TO BE DEGREASED.

THE SHARPENING STEEL IS GREASY, THE STEEL WAS WASHED, RINSED AND SANITIZED AT THIS TIME.
