The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Clean and maintain the floors and baseboards so they are smooth and sanitary from corner to corner.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Remove ice from the walk-in cooler condenser.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Wash, rinse and sanitize all of the equipment including the racks next to the grill and in the small rear cooler, the knife holder and the can opener until it is clean and sanitary.
The walls and ceilings shall be in good repair and easily cleaned. Clean the walls above the kitchen prep areas of accumulated grease and dust.

THE WALK IN COOLER HAS A WATER DAMAGED CEILING AND THE KITCHEN 1 DOOR UPRIGHT COOLER HAS RUSTY SHELVES AND INTERIOR BOTTOM, REPAIR SAID EQUIPMENT SO IT IS SMOOTH, SANITARY AND EASY TO MAINTAIN.

SPILLED REFRIED BEANS FOUND BEHIND THE STEAMTABLE AND GREASY BUILDUP AROUND THE 3 COMPARTMENT SINK DRAIN AREA NEED TO BE CLEANED. MAINTAIN THE FLOORS AND BASEBOARDS SO THEY ARE SMOOTH AND SANITARY FROM CORNER TO CORNER.
The walls and ceilings shall be in good repair and easily cleaned. HOLES FROM PLUMBING WORK ABOVE THE CHEST FREEZER AMD MOP SINK NEED TO BE REPAIRED SO THEY ARE SMOOTH AND SANITARY.

Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.MUST PROVIDE LIGHT SHIELD AT REAR PREP AREA ABOVE 3COMP SINK.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.MUST PROVIDE A BACKFLOW PREVENTER AT REAR UTILITY SINK.
