WE OBSERVED OVER 400 PLUS RODENT MICE DROPPINGS THROUGHOUT THE FOOD ESTABLISHMENT (TMTC)TOO MANY TO COUNT.FOUND IN THE KITCHEN-FOOD PREP AREAS ON BOTTOM SHELVINGS OF FOOD PREP TABLES NEAR THE CARDBOARD PIZZA BOARDS,ON THE ELECTRICAL OUTLETS NEAR THE PREP COOLER IN THE KITCHEN FOOD PREP AREAS, DRY STORAGE ROOM WHERE THE 2 LITER SODAS ARE KEPT NEAR THE KITCHEN,ON FLOOR INSIDE THE WALK-IN-COOLER 2ND FLOOR,BENEATH THE DISHMACHINE UNIT ON PIPES,ON THE INTERIOR MOTOR COMPONENTS ON THE SIDE PANELS OF THE LARGE PIZZA OVENS IN THE KITCHEN FOOD PREP AREAS,CUSTOMERS DINING AREAS(BENEATH SEATING BOOTHS),BAR,2ND FLOOR STORAGE AREAS,LAUNDRY ROOM.FOUND ONE (1) DEAD MOUSE FOUND IN THE SECOND FLOOR DRY STORAGE ROOM.ALSO THE NORTH EXIT DOOR LEADING TO THE ALLEY,THE EAST DELIVERY/PICK-UP DOOR IS NOT RODENT PROOFED APPROXIMATELY 1/4' MODE OF ENTRY. DETAIL CLEAN AND ORGANIZE KITCHEN FOOD PREP AREAS,2ND FLOOR DRY STORAGE ROOMS,LAUNDRY ROOM AND REMOVE UNNECESSARY ARTICLES THROUGHOUT DUE TO POTENTIAL PEST HARBORAGE.ALL ITEMS KEPT MUST BE NEAT,SANITARY 6' OFF FLOOR/WALL.ALSO REMOVE CLUTTERED ARTICLES FROM TOP OF WALK-IN-COOLER 1ST FLOOR KITCHEN FOOD PREP AREAS,FROM BOTTOMS OF FOOD PREP TABLES ETC.
ALL BULK FOOD CONTAINERS STORED BENEATH THE FOOD PREP TABLE AT REAR MUST BE LABELED TO IDENTIFY THE FOODS STORED. ALL PREPARED FOODS INSIDE THE WALK-IN-COOLERS MUST BE LABELED/DATED.
MUST REPLACE OR REPAIR RUSTY SHELVINGS INSIDE THE WALK-IN-COOLERS AND IN THE 2ND FLOOR DRY STORAGE AREAS USING A NON-TOXIC FINISH ALSO CUTTING BOARDS WITH DEEP CUTS MUST BE REPLACED.
