All food establishments that display, prepare, or store potentially hazardous food shall have adequate refrigerated food storage facilities. FOUND PREP COOLER AIR TEMP AT 48.8F, INSTRUCTED MGR TO KEEP COOLER TEMP AT 40F OR LOWER. COOLER IS TAGGED, NOT ALLOWED TO USE FOR PERISHABLE STORAGE, MUST FAX A TAG REMOVAL REQUEST TO 312-746-4240 WHEN READY.
All cold food shall be stored at a temperature of 40F or less. FOUND THE FOLLOWING FOOD ITEMS AT IMPROPER TEMPERATURE: 2LBS OF RAW FISH AT 51.5F, 2LBS OF TUNA SALAD AT 52.1F AND 2LBS OF DELI TURKEY BREAST AT 51.2F, FOOD ITEMS WERE STORED IN PREP COOLER, INSTRUCTED MGR TO STORE SUCH FOODS AT 40F OR LOWER, FOOD DISCARDED VALUED AT $100.
