All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MOP SINK WITH DEBRIS INSIDE NEEDS CLEANING. ALSO VENTS IN TOILETS AT DINING WITH DUST NEEDS CLEANING.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS IN BASEMENT AT DIFFERENT LOCATIONS WITH STANDING WATER MUST BE CLEANED AND MAINTAINED DRY AT ALL TIMES. MUST ELEVATE CONTAINERS STORED ON FLOOR IN BASEMENT 6' OFF FLOOR.
The walls and ceilings shall be in good repair and easily cleaned. MISSING AND SEVERELY WATER DAMAGED CEILING TILES AT REAR CARNITAS DRYING ROOM AND IN TOILET AT DINING NEEDS REPAIR OR REPLACING. MUST CLEAN WALLS BEHIND CARNITAS HANGING DRYING SHELVES WITH GREASE STAIN.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. FAUCET AT EXPOSE HAND WASH SINK AT FRONT PREP AREA,AND PIPE UNDER TOILET TANK IN EMPLOYEES TOILET IN KITCHEN LEAKING WATER, NEEDS REPAIR.
