The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS BEHIND ICE MACHINE & DISHMACHINE MUST BE FREE OF CLUTTER/DEBRIS.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. ANY CUTTING BOARD WITH DEEP/DARK GROOVES MUST HAVE SMOOTH/EASILY CLEANABLE SURFACES.

MUST REPLACE DAMAGED DELI CASE SLIDING DOOR AT THE FRONT PREP AREA.
MUST PROPERLY STORE WASH CLOTHS IN SANITIZING SOLUTION AT ALL TIMES.
MUST REMOVE OFF PREMISES INOPERABLE EQUIPMENT FROM THE REAR PREP AREA (DISCONNECTED INOPERABLE DISH MACHINE)WHICH WAS REPLACED THIS MORNING.
