Outer openings not protected or rodent proofed and evidence of rodent and live insect activity. Found approximately 25 plus live gnats on walls leading to receiving area and approximately 30 plus mice droppings inside walk-in cooler used for dry storage. Also, north, south and west exit doors has 1/4 inch gap across bottom. Instructed to rodent proof doors to prevent rodent and insect entry and remove all pest activity and sanitize areas. Serious citation issued 7-38-020.

Dumpster lids are elevated and tight fitting to prevent rodent or insect entry. Instructed to have dumpster lids tight fitting to prevent rodent and insect nuisance. Serious citation issued 7-38-020

Bacon 30 lbs at 57.0 F, value $124. Sausage 10 lbs at 52.4 F, value $34. Also, dining room in 1143 building has salad bar with cold items sitting out at room temeprature. Found boiled eggs at 4 dozen 49.6 F, value $15. Instructed manager that potentially hazardous foods must maintain 40 F or below. Must provided cold holding unit or storage for salad bar. Critical citation issued 7-38-005(A). Total value $248.00, 94 lbs. Manager voulntarily denatured and discarded foods.
