Found lower level storage areas not clean/organized. Moreover, dishwashing areas need order and cleaning.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. Found containers not stored properly on shelving units.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Found floors not clean at dishwashing areas.

Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. FOUND HIGH TEMPERATURE DISHMACHINE NOT SANITIZING PROPERLY.(FINAL RINSE AT 160F). CRITICAL VIOLATION. CITATION ISSUED. TAGGED MACHINE. MUST FAX LETTER TO FOOD PROTECTION DIVISION WHEN DISHMACHINE IS REPAIRED.
All cold food shall be stored at a temperature of 40F or less. FOUND 50 POUNDS OF ALFREDO SAUCE INSIDE WALK IN COOLER AT 78.4F. INSTRUCTED MANAGEMENT TO DISPOSE. ALSO, INSTRUCTED MANAGEMENT TO COOL FOOD PROPERLY BEFORE STORING INSIDE COOLERS. CRITICAL VIOLATION. CITATION ISSUED.

All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OBSERVED OVER 30 LIVE SMALL FLIES ON WALLS THROUGHOUT DISHMACHINE ROOM AND AT CATERING STATION. INSTRUCTED MANAGER TO ELIMINATE ALL PEST ACTIVITY. REINSPECTION DATE (06/28/11).
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. THE FOLLOWING NOT CLEAN- OBSERVED SLIGHT LIME BUILD UP INSIDE ICE MACHINE AND FOOD DEBRIS INSIDE UNUSED REACH IN COOLER(BY FRYERS). MUST CLEAN AND MAINTAIN EQUIPMENT.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. OBSERVED ICE BUILD UP INSIDE UNUSED PIZZA REACH IN COOLER. MUST REMOVE ALL ICE AND CLEAN INTERIOR OF COOLER.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED UNCLEAN WALLS AND CEILING TILES THROUGHOUT DISHMACHINE ROOM AND AT CATERING STATION. MUST CLEAN AND MAINTAIN ALL UNCLEAN WALLS/CEILING.
