OBSERVED CHILI/CHEESE DISPENSER WITH AN INTERNAL AIR TEMPERATURE OF 123F. UNIT TAGGED BY CDPH. MANAGEMENT INSTRUCTED TO MAINTAIN THE UNIT ABOVE 140F. FAX REINSPECTION LETTER TO (312) 746-4240 WHEN READY FOR REINSPECTION. CRITICAL VIOLATION 7-38-005A.
All hot food shall be stored at a temperature of 140F or higher. OBSERVED POTENTIALLY HAZARDOUS FOODS AT IMPROPER TEMPERATURES. OBSERVED CHILI AT 122-127F, AND NACHO CHEESE AT 129F. MANAGEMENT DISCARDED 16# OF FOOD WORTH $36. CRITICAL VIOLATION 7-38-005A.
All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OBSERVED APPROXIMATELY 30 LIVE FRUIT FLIES AND 2 HOUSE FLIES IN THE RETAIL AREA, RESTROOM AND REAR STORAGE AREA. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO MINIMIZE OR ELIMINATE THE PEST ACTIVITY.
