--Chicken, located in prep kitchen walk-in cooler was being stored above pork. Ground beef, located in the Kosher kitchen was being stored over whole cuts of beef. Store raw meat in the following order: raw poultry below all other raw meat, ground beef above raw poultry and below all whole cuts of raw meat, and whole cuts of raw meat, such as pork beef and fish above ground beef.
- Wiping Cloths Use Limitations (46.304)
--Wiping cloths were not being stored in sanitizer in the prep kitchen and the serving areas. Store all wiping cloths in sanitizer solution.
- Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
--A large amount of hummus, being stored in a deep pan, was being cooled in a cold hold unit. Do not cool large amounts of food in deep pans. Do not cool food in cold hold units. Cool food in shallow pans in the walk-in cooler, in a an ice bath or with an ice wand.
- Food Storage Requirements & Prohibited Areas (46.321)
--A tote with garbage was being stored next to the bread storage behind the pizza area, potentially subjecting the bread to splash contamination from the garbage. Do not store the garbage tote next to the bread storage.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Food debris was observed on the floor in the dry storage room. Grease accumulation was observed on the floor around the fryer at the grill. The under counter equipment/utensil shelves in the prep kitchen were dirty. Clean the floors and the equipment/utensil shelves.
