She said they take food out of hot box at 11:15AM and dish it up and set on the table so the kids won't miss much recess. It sits there for about ten minutes. The hot box temperature was reading 175F on the external digital thermometer. Inspector recommended that they start dishing up food when they see students at the door, food must remain at 135F or they need to reheat in the oven to 165F.
